eggs and microgreens

Eggs are a source of protein and contain Choline which benefits neurotransmitters. Microgreens are a source of glutathione and folate to aid the body in methylation and managing free-radical stress. Apple cider vinegar supports a healthy gut. This meal is ketogenic in nature.


2-3 eggs sautéed with 1 teaspoon of ghee or grass-fed butter
1 slice of goat or sheep’s milk cheese folded into eggs (if desired)

1 sweet potato baked and mashed

1 cup microgreens
1/4 cup chopped red onion
1/4 cup chopped organic tomatoes
1 tablespoon olive oil
1 tablespoon apple cider vinegar

Mix the greens, onion, tomato, olive oil, and vinegar to make a small salad

Plating:
Place smashed sweet potato on a plate. Place the eggs on top of the potato. Add the salad on top. Season if desired with Himalayan Sea Salt and Pepper.
